These recipes for apple pies are remembered by everyone who spent the summer in the village with their grandmother. It's hot, the sun's rays are reflected in the river. You need to hurry to dinner, and on the table there is a huge dish with your favorite delicacy and a jug of fresh milk. In puff pastries, a sweet and sour filling is hidden under a fresh crust. I remember the beginning of autumn, sunset and the air filled with apple aroma. The most popular baked goods are those cooked in a frying pan. It is associated with the comfort of home. Sweet, a little sticky. Pieces of filling are covered with sugar caramel and resemble marmalade. Recipes for apple pies are a great option for holidays and family dinners. A tasty treat should be served with hot drinks. It will be appreciated by adults and children.

Only in the summer-autumn season are baked goods with apples so aromatic and especially attractive. For me, apples in baked goods are real magic with an indescribable aroma, and it’s definitely impossible to explain these feelings in words.

Recipe for apple pies:

For the filling:

  • Apples - 4-5 pcs. (I have small ones);
  • Sugar - 2 tbsp. spoons;
  • Lemon juice - 2 tbsp. spoons;
  • Cinnamon, cardamom and other baking spices - to taste.

For the test:

  • Milk - 250 ml;
  • Sugar - 3 tbsp. spoons;
  • Yeast - 25 pressed (wet) or 7 g dry;
  • Salt - 0.5 teaspoon;
  • Eggs - 1 pc.;
  • Flour - 3.5 cups (about 450-470 g);
  • Vegetable oil - 100 g.

How to cook apple pies in the oven

We will prepare the dough using the sponge method. Today we will use live yeast, but pies made with dry yeast turn out just as good.

Instead of 25 g of fresh yeast, you can use 7 g (1 small teaspoon) of dry yeast.

Mash the yeast into pieces using a fork or spatula. Add 1 tbsp. spoon of sugar.


Add warm milk. The temperature of the milk should not be higher than 40 C, otherwise the yeast may die.

To make the dough stronger, add 3 heaped tablespoons and stir well.

Don’t worry if not all the lumps are mixed in the dough - this is normal for dough, we don’t need smoothness at this stage.

Cover the dough with cling film or a towel and place it in a place without drafts for 10-15 minutes (for example, in a switched off oven).

While the dough is rising, prepare the flour (0.5 cups went into the dough, the remaining 3 cups will be needed when kneading the dough). The flour needs to be sifted well through a fine sieve, saturate it with air, thanks to this the dough for pies will be fluffier and airier.

We prepared the flour and set it aside.

Break the egg and mix with salt. Then add the remaining sugar (2 tablespoons).

Add vegetable oil (almost half a faceted glass).

Pour the suitable dough into the dough. Mix.

We start adding flour. You can add it through a sieve, while simultaneously sifting it again.

We begin to knead the dough using a spatula or spoon. Add flour gradually, in parts.

At some point you will feel that the dough is already too thick to knead with a spatula (spoon).

Set the spatula aside. Place the dough on a floured surface and begin kneading the dough with your hands. Yeast dough loves your hands very much, the more effort you put into kneading, the better your baking will turn out.

When the dough begins to easily come off your hands, roll it into a ball and return it to the bowl.

Pour a little vegetable oil into your palm and grease the surface of the dough ball. Cover the bowl with a towel or cling film.

The dough should rise and rise properly at room temperature without drafts (it usually takes me 1.5-2 hours.

Apple filling

While the dough is rising, prepare the apple filling.
If desired and to taste, you can add orange or lemon zest, cinnamon, and cookie crumbs to the apple filling, but in any case, prepare the apples correctly in advance. By removing excess juice, you will not worry about leaking pies in the oven.

Peel the apples.

Cut into small cubes (we cut vegetables for Olivier salad of similar sizes).

Sprinkle with lemon juice and sprinkle the filling with sugar. Lemon juice is needed so that ripe fruits release excess moisture as quickly as possible. Granulated sugar also contributes to this.

Before adding the filling to the pies, squeeze it out so that the juice from the apples does not leak out in the oven during baking.

If the apples are very juicy and you are worried that the apple pies will start to leak in the oven, prepare the filling in a different way. Cut the fruit into medium-sized cubes, place in a frying pan with a small piece butter and sprinkle with sugar. Simmer the apples over low heat for 3-4 minutes. After complete cooling, drain off excess liquid (you can drain the filling in a colander).

Forming pies

The risen dough should be divided into pieces, which we will place on a surface sprinkled with flour. The pieces are the size of a large chicken egg. Each piece of dough is a future pie. Particularly demanding housewives distribute the dough into pieces according to weight so that the baked goods look perfect, all the pies are the same.

Roll out each piece of dough using a rolling pin (or press with your hands).

Place the filling on each flatbread (1 heaped teaspoon). To taste, you can sprinkle the filling a little with sugar (but I usually don’t do this, the apple filling turns out sweet anyway).

We pinch the pie so that there are no holes left. Place on a baking sheet covered with parchment paper.

Now you need to grease the apple pies so that they get a golden brown crust in the oven.

The secret to a crispy golden brown crust is simple - mix the yolk of one egg with a pinch of salt and add 1-2 tbsp. spoons of milk.

I noticed that if you grease the baked goods not just with yolk, but with yolk with water or milk, the surface turns out beautiful, glossy and not as dark as when greased only with yolk.
Using a pastry brush, grease all the pies on the baking sheet.
You can sprinkle the top of your baked goods with sugar or baking spices.

I bought specially selected spices from a grinder and often use them for sprinkling. The aroma in the apartment is indescribable! Still, freshly ground spices give off a much better aroma than those from a bag.


Place the pies a short distance from each other to prevent them from sticking together in the oven ( yeast dough increases significantly in size).


By this time you need to turn on the oven to heat up (temperature 180 C).
After 15 minutes, our pies will “grow” a little and increase in size. Now it's time to go into the oven!
5 minutes after the pies have been in the oven, you need to reduce the baking temperature to 160 C and bake for another 25-30 minutes.
After half an hour, the apple pies are ready in the oven. Take out the baking sheet with the pies and place them on a plate or in a bowl. With hot tea, milk or kefir - it will be delicious with any drink.

  • 40–50 g walnuts;
  • 40–45 g raisins;
  • 500 g apples;
  • 160 g sugar;
  • 1 teaspoon cinnamon;
  • 400 g flour;
  • 1 pinch of salt;
  • 10 g baking powder;
  • 40 ml cognac;
  • 100 ml vegetable oil;
  • 1 teaspoon powdered sugar - optional.

Preparation

Remove the zest from the orange and grate it on a fine grater. Squeeze 100 ml of juice from the fruit, making sure that no seeds get into the liquid.

Grind the nuts in a mortar. Soak the raisins in warm water for 15–20 minutes.

Peel the apples, remove the core, and then cut the fruit into small pieces. Place in a saucepan and add 100 g of sugar. Simmer over low heat for 10–15 minutes or a little longer, stirring constantly. A couple of minutes before readiness, add ½ teaspoon. Cool. Combine with half the zest, raisins and nuts.

In a deep bowl, mix the flour with the remaining sugar and cinnamon, salt, and baking powder. Combine cognac with butter and orange juice in another container. Then gradually pour into the flour mixture, stirring constantly. Add the zest little by little. Knead into a homogeneous dough.

Roll it out into a thin layer and cut into square slices. Place a little filling on each piece. Pinch the edges and press lightly with a fork to keep them in place. Place the pies on a parchment-lined baking sheet. Bake for 20–25 minutes in an oven preheated to 180°C.

Sprinkle with powdered sugar before serving.

  • 520 g flour;
  • 50 g butter;
  • 2 eggs;
  • 1½ teaspoons salt;

  • 1–2 bay leaves;
  • 2 onions;
  • 1–2 apples;
  • 1–2 tablespoons vegetable oil + for greasing;
  • pepper - to taste.

Preparation

Dissolve yeast and sugar in warm milk. Add 1 tablespoon of flour and leave warm for 10-15 minutes.

Melt the butter and cool slightly. Mix with the dough, 1 egg and ½ teaspoon of salt. Add flour and knead the dough. Cover with a napkin and leave at room temperature for 1 hour or a little longer to allow it to rise.

Chicken fillet with 1 teaspoon of salt and bay leaves for 15–20 minutes. Cool.

Cut the onion into small pieces, apples into large slices.

Heat vegetable oil in a frying pan over medium heat. Brown the onion for 3-5 minutes. Refrigerate.

Pass through a meat grinder chicken fillet and apples. Mix with onion, salt and pepper.

Pies with apples in the oven We love them, I bake them often and not only with apples. By the way, now is pumpkin season, if you like, you can add a little grated pumpkin to the apples. If you love fried pies, for them you can knead pies from this dough and they also turn out tasty and soft.

Ingredients:

For the test:

  • 250 ml kefir or milk
  • 550-600 g flour
  • 125 g butter or margarine
  • 2.5 tsp. dry yeast
  • 0.5 cups sugar
  • 1 egg + one for brushing the pies
  • vanillin
  • pinch of salt

for filling:

  • apples - 5-6 pieces
  • sugar to taste
  • cinnamon optional

Pies with apples in the oven:

Heat kefir or milk. Dissolve the yeast in it. Melt butter or margarine. Beat the egg with a fork.

Combine milk, melted butter, egg, add sugar, vanillin and salt. Mix.

Add flour in portions and knead into a soft, elastic dough. Cover the dough with a clean napkin and place in a warm place for about an hour. You can place the bowl of dough in a container of warm water and change the water periodically. The dough should double in volume.

We tear off a piece from the finished dough and form a ball, then roll out or knead each ball with a rolling pin or hands into a flat cake.

Place grated apple filling in the middle of the flatbread if apples sour ones can be sprinkled with sugar on top.

We connect the edges of the cake and pinch it. We do this with every pie.

  • butter - 75 g;
  • flour - 450 gr;
  • milk - 170 ml;
  • a pinch of salt;
  • three eggs;
  • granulated sugar - 150 g;
  • apples - 0.4 kg;
  • dry yeast - 20 gr.

Step-by-step preparation:

  1. First we make the dough. Heat the milk for 3 minutes.
  2. Pour it into a large saucepan, add yeast.
  3. Add 50 grams of sugar. Stir with a spoon until the bulk ingredients dissolve in the milk.
  4. Break two eggs into the same pan.
  5. Separately, soften the butter and add it to the milk.
  6. Place a sieve over the bowl of milk and pass the flour through it.
  7. Form the dough with your hands. It should not stick to your hands.
  8. We form a ball out of it and put it in a basin under a towel.
  9. We leave it in the kitchen for one hour.
  10. Let's start with the filling: Process the apples by washing them, cutting them into slices, removing the seeds and the hard middle.
  11. Cut the pulp into small pieces.
  12. Add the remaining sugar to the apples and mix. To prevent the filling from darkening, sprinkle lemon juice on it.
  13. During this time our dough will rise. Cut small pieces from it.
  14. Roll each of them out with a wooden rolling pin on a countertop sprinkled with flour.
  15. Place a teaspoon of apples in the center of the cakes. We seal the edges with our hands.
  16. Place baking paper on a baking sheet.
  17. After 20 minutes, beat the egg in a bowl.
  18. Place the pies on a baking sheet and brush the tops with egg.
  19. Place in an oven preheated to 200 degrees.
  20. We prepare the pechevo for half an hour.

Puff pastry recipe

The apple puffs come out of the oven crispy and tender. Thin dough will allow you to fully experience the amazing taste of the filling.

Recipe Ingredients:

  • lemon juice - 40 ml;
  • five apples;
  • a piece of butter - 30 g;
  • granulated sugar - 50 g;
  • ground cinnamon - 10 g;
  • ready puff pastry- 500 gr;
  • chicken egg - 1 pc.

How to make puff pastry pies:

  1. We remove the thin skin and core with seeds from the apples, cut everything else into slices.
  2. To prevent the cubes from acquiring a grayish tint (which happens when they come into contact with air), pour lemon juice on them.
  3. Place a piece of butter on the bottom of the frying pan, heat and melt it.
  4. Chop apple pieces, add cinnamon and sugar.
  5. Fry the fruit for 3 minutes.
  6. Let the filling cool.
  7. Ready-made puff pastry is sold in the store. It can be done at home, but keep in mind that this is a very long process.
  8. We lay out the rectangle of dough and divide it into ten squares.
  9. Place a tablespoon of apple slices in the center of the dough.
  10. We pull its corners to the middle - we get an envelope.
  11. We grease all the envelopes with egg white, place them on a greased baking sheet and place them on a shelf in the oven.
  12. Don't forget to preheat it to a temperature of 200 degrees.

  • dry yeast - 20 g;

Step-by-step preparation:

  1. Pour the milk into a bowl of water.
  2. We heat the liquid mixture on the stove and throw in the yeast.
  3. Pour in the raw eggs and add salt. Mix the contents of the saucepan with a whisk.
  4. Pass the flour through a sieve into a saucepan with the milk mixture.
  5. Make the dough with your hands. It will turn out a little sticky.
  6. To make the task easier, grease your hands with sunflower oil and form the dough into a ball.
  7. Cover the dish with the bun with a towel and leave to rise for an hour.
  8. When it doubles in size, take it out onto the table, press it with your hands and leave for another 30 minutes.
  9. After this, we take pieces from the dough and make pancakes.
  10. Grind the peeled, processed apples and sprinkle with lemon juice.

  12. Drain the water from it and transfer it to the apples. Add sugar and mix.

  3. Pour in the raw egg and beat the mixture with a fork.
  4. Add flour mixed with baking powder. Use your hands to make an elastic, soft dough.
  5. Cover the lump of dough with a napkin and leave it for a while while you make the filling.
  6. Chop the peeled apples into small cubes.
  7. Heat oil in a frying pan. Transfer it to a clean saucepan, add sugar and apple pieces.
  8. Turn on the stove and simmer the apple mixture until all the liquid has gone.
  9. Then add raisins and vanilla.
  10. Preheat the oven in advance and line a baking sheet with baking paper.
  11. As soon as the filling for apple pies has cooled, divide the dough into pieces and roll out.
  12. Place the fruit mixture in the center of each plastic.
  13. We form the pies and send them to bake.
  14. The cooking process will take you half an hour.

Cinnamon phyllo dough option

Products made from phyllo dough come out of the oven golden brown, with a delicious crispy crust. Be sure to try it!

You will need:

  • four apples;
  • one egg;
  • granulated sugar - 70 g;
  • dough - 0.2 kg;
  • cinnamon - 11 g;
  • butter - 0.1 kg.

How to cook apple pies in the oven:

  1. Peel the apples and remove seeds. Cut the juicy pulp into pieces.
  2. Pour cinnamon into a bowl with apples.
  3. We cut the finished phyllo dough, which we bought in the store or prepared in advance, into long strips (20*8 cm).
  4. Heat the butter in the microwave and grease the entire surface of the dough with it.
  5. Place apples on the very edge of the strip with a teaspoon and sprinkle with granulated sugar.
  6. Fold in the edges and roll the filling into a roll. This is how we make pies.
  7. Protect the baking sheet from burning with baking paper.
  8. Place the resulting pies on top.
  9. Break a chicken egg into a cup.
  10. Dip a brush into it and coat the surface of the pies.
  11. You can sprinkle sugar on top.
  12. Bake in the oven at 190 degrees until golden brown.

The right filling for apple pies

Pies are not the simplest dish. Therefore, it is necessary to take the preparation of the filling seriously, otherwise the dough will turn out soggy and the apples will be cloyingly sweet.

  1. If you have sour apples, add more sugar, and vice versa.
  2. To prevent the filling from darkening, sprinkle lemon juice on it, and the apple pieces will again acquire a presentable appearance.
  3. To prevent the filling of the pies from being too liquid, simmer or fry the apple pieces in a frying pan - this will remove excess liquid from them.
