Most often, potatoes are baked with chicken meat, although in addition to them there are a very large number of tasty and healthy vegetables that can be used to diversify numerous types of meat. These include asparagus, green beans, eggplant, sweet peppers, tomatoes, zucchini, cauliflower, Brussels sprouts, broccoli, onions, artichoke, pumpkin.

I love pumpkin very much and most often use it to make sweet desserts and baked goods. Soups and main courses are somewhat less common, but I’ve never had to bake pumpkin with chicken. This year I finally decided to cook this dish. The chicken with pumpkin turned out very, very tasty. If you love this vegetable, then be sure to cook it in the oven with pumpkin. This is the kind of pumpkin that is sold in supermarkets, while at the market they can also sell you pumpkin of forage varieties. Regarding chicken, I would like to add that for baking you can take one or another part of it or even the whole carcass. Today I want to show you how to deliciously and quickly bake chicken thighs in the oven in a spicy marinade with spices.

This marinade is also suitable for baking a whole chicken carcass, but to ensure that it is perfectly cooked, I recommend using a baking bag. Pumpkin can be placed both in the middle of the chicken carcass and around it. In addition to chicken, I only used onions from vegetables, but you can add potatoes, carrots, prunes, mushrooms, dried apricots, bell peppers, and grated cheese to the dish.

Ingredients:

  • Chicken legs – 1 kg.,
  • Pumpkin – 300-400 gr.,
  • Spices – 1 teaspoon,
  • Balsamic vinegar - 3 tbsp. spoons,
  • Apple cider vinegar – 2 tbsp. spoons,
  • Salt – 1 level coffee spoon,
  • Garlic – 3 cloves,
  • Onions – 2 pcs.,
  • Refined sunflower oil – 80-100 ml.

Chicken with pumpkin in the oven - recipe

Any parts of the chicken you choose for baking should be checked for feathers, and then be sure to rinse with cold water. Before marinating, it is advisable to pat the meat dry with napkins or a paper towel. It is advisable to cut whole chicken legs, consisting of thigh and drumstick, into two parts at the joint. Today I will bake chicken thighs with pumpkin.

Peel a piece of pumpkin and remove seeds. Cut the pumpkin pulp into cubes approximately 2 by 2 cm in size.

Peel the onion and cut it into rings. Cut the onion rings in half. And in half again. The end result should be quarter rings.

Let's move on to the next stage - preparing the marinade. To do this, pour sunflower oil into a bowl.

Add spices.

There are no strict rules for choosing them for marinating chicken. You can buy ready-made chicken or chicken spices, or mix your favorite spices. Most often I prepare spices for meat and fish myself. In this recipe for baking chicken with pumpkin in the oven, I used a spice mixture of paprika, black pepper, curry, and dry adjika.

Pour in balsamic vinegar, but do not confuse it with plain grape vinegar. Balsamic vinegar is very sweet and thick, while ordinary grape vinegar is very close in consistency and taste to table vinegar, but at the same time differs from it in its ruby ​​color and the characteristic smell of grapes. If you don't have it, then replace it with a teaspoon of honey.

Peel the garlic into the chicken marinade and squeeze it through a press.

Pour in apple cider vinegar.

Add salt.

Mix the marinade.

Pour the resulting spicy marinade with vegetable oil, vinegar and spices over the chicken legs (drums, wings or breast). At the same time, leave a little marinade for pickling vegetables. Use your hands to coat the chicken pieces with the marinade until they are completely coated. Combine pumpkin and onion in a bowl. Pour marinade over them. Stir.

Place chicken thighs in a baking dish.

Place pickled vegetables around them.

Heat the oven to 180C. At this temperature, vegetables should be baked in the oven for at least 35 minutes. During baking, chicken and vegetables must be watered with the juice formed at the bottom of the pan. Make sure the chicken is done by piercing it with the point of a knife. If clear juice appears instead of blood, it means it is already well baked and you can safely remove it from the oven.

For cooking, you can use any parts of the chicken or even the whole carcass. The meat is washed and cut into portions. If fillet is used, it is chopped into small pieces. The breast can be baked whole.

Peel the pumpkin and select seeds with fiber. Then the vegetable is cut into arbitrary pieces. In addition to pumpkin, you will need onions and garlic. They are peeled. The onion is chopped into thin half rings, and the garlic into thin slices.

Chicken pieces are mixed with marinade or spices and left for an hour. You can also pickle vegetables.

Then the vegetables are placed in a greased form, and chicken pieces are placed on top. Bake for 45 minutes at 180 C.

Before baking, the dish can be topped with a sauce based on cream or sour cream.

The dish can be prepared in ceramic pots.

In addition to pumpkin, potatoes, sweet peppers or other vegetables are added to the dish.

Recipe 1. Chicken with pumpkin in the oven with spices

Ingredients

kilogram of chicken;

3 g dried garlic;

kilogram of pumpkin;

40 g parsley;

black pepper;

30 g garlic;

3 g allspice;

100 g sour cream;

10 g turmeric;

50 ml of drinking water;

3 g dried ginger;

5 g mustard seeds;

20 g barberry.

Cooking method

1. Peel the pumpkin and remove seeds and fibers. Cut the pulp into not too small cubes.

2. Wash the lemon, wipe it, cut it in half and squeeze the juice out of it using a special device.

3. Wash the chicken, dry it with napkins and remove the skin. Place the meat in a bowl and add mustard seeds, half a barberry, dried garlic, ground black and allspice, ginger and turmeric. Mix with your hands so that the spices are evenly distributed throughout all the pieces of meat. Pour lemon juice on top and leave to marinate in the refrigerator for half an hour.

4. Peel the garlic. Place the pumpkin cubes in a deep form, add sour cream, season with black pepper and turmeric, pour in water and squeeze the garlic through a press. Stir and place in the oven for half an hour. Bake at 180 C.

5. Rinse and chop the parsley. Remove the pumpkin pan and place the marinated chicken and marinade on top. Sprinkle with half the parsley and stir. Place in the oven again for forty minutes. Then cover the pan with foil and leave for another ten minutes.

Ingredients

three large chicken thighs;

half a glass of purified water;

one and a half kilograms of pumpkin pulp;

large onion;

two green apples.

1. Cut the skin off the pumpkin and clean out the seeds. Chop the pulp into two centimeter cubes. Place the pumpkin in a deep baking dish.

2. Peel the apples and cut out the seeds. Grind the fruit pulp into small cubes. Scatter the apples over the pumpkin.

3. Peel the onion, cut in half and chop into thin slices. Spread the onions over the apples.

4. Salt vegetables and fruits, and pour in half a glass of purified water.

3. Place the vegetables in a bowl, add some of the marinade to them and stir.

Ingredients

200 g chicken fillet;

sea ​​salt;

200 g pumpkin pulp;

khmeli-suneli;

200 g Dor Blue cheese;

50 ml olive oil.

Cooking method

1. Wash the chicken fillet, dry it with a paper towel and cut into medium pieces. Place the meat in a bowl, add salt and season with suneli hops. Stir and leave for 20 minutes.

2. Using a sharp knife, remove the skin from the pumpkin and clean out the seeds. Cut the pulp into arbitrary pieces. Transfer the chopped vegetable into a deep bowl and add a spoonful of pumpkin seeds. Salt, season with suneli hops, pour a spoonful of olive oil and add finely chopped garlic. Ingredients

freshly ground pepper;

300 g chicken fillet;

table salt;

600 g peeled pumpkin;

100 ml olive oil;

50 g dried mushrooms;

a glass of purified water;

two onions.

Cooking method

1. Wash dried mushrooms and soak them in cold water for an hour. After the allotted time, drain them in a colander and leave to drain all the water. Cut the mushrooms into small pieces.

2. Peel the pumpkin and remove the seeds. Chop the vegetable pulp into small cubes.
